Asparagus

The white SanLucar asparagus needs sandy soils and that is why it flourishes especially well in the Spanish areas of JaƩn and Extremadura. It is harvested daily during its season. The majority of the green asparagus comes from Granada. The high situation and its proximity to the Sierra Nevada mountain range brings strong diurnal temperature differences, especially good for the green asparagus. You can recognize SanLucar asparagus through its green colour from head to stalk. At the manual harvesting we pay attention to the fact that all green and white SanLucar asparagus are the same size and straight.

SanLucar' Tip:

  • You can recognize fresh asparagus on the closed tips. The asparagus end should not be dry.
  • To avoid shrivelling and withering of the stalks, it is advisable to store them in the fridge in a humid cloth.
  • You should peel white asparagus! Use a potato peeler, vegetable knife or best a special asparagus peeler. Peel them in the direction of the head end to the cut end. Green asparagus does not necessarily need to be peeled, and if anything, just cut the end.
