Aubergines/Eggplants


SanLucar aubergines have a very good flavour and a shiny skin. Because they are especially resistant, they also mature when the weather conditions are not the best. A special SanLucar variety is the Zebra aubergine. With its light stripes it reminds you of a zebra. And so velvety and mild as the animal is also the flavour of the aubergine.

SanLucar' Tip:

  • Because aubergines get dry easily, you should wrap them in aluminium foil and keep them cool.
  • Aubergines stay white and juicy if you cut them in slices and then soak in salt water with a spoon of sugar.
  • When you grill them, use little oil, because aubergines soak lots of oil.
