Sometimes it is better to harvest less and to bring in a real rich harvest. For SanLucar selection is most important when it comes to harvesting. And that starts long before. In spring we walk the fields and for example choose those orange trees that will bear the best.Which you can tell by the blossoms.
At harvesting itself the strict selection continues.Well trained and long-standing seasonal workers pick only the ripest and biggest fruits for SanLucar. Doing so by using small scissors for the fruits’ sake. Every SanLucar farmer is running several operations while harvesting, to only pick the ideal ripe fruits each time.
As more eyes see more, fruit not that sensitive, like oranges for instance, will be handselected one more time at the packing house. Using black light we check the fruit for black spots and accordingly sort it out. With fruits such as strawberries though, we have to rely on the careful screening out in the field, because it is fruit very sensitive to the touch. But that way, You can be sure to get it first hand.
