Preparation
Pour the red wine (leave 2 table spoons aside), the orange juice, the lemon rind, sugar, cinammon and cloves in a shallow saucepan. Let it boil on low heat, without covering it, for 10 minutes. Peel the SanLucar pears and cut them into halves, not cutting out, if possible, the stalk. Remove the heart carefully. Let the pears boil in the wine on a low heat in a covered saucepan for 15-25 minutes until they are soft but do not fall into pieces. Finally, let them drain in a colander, strain the wine and keep it. Mix the starch and the rest of the wine, pour it into the cooking liquid, add the grapes, and let it all boil together. Cut the pear halves into fan shape, so that they keep together at the stalk. Strain the apricot jam through a strainer, stir with some water until smooth and put it into a plastic or paper bag. Cut one corner and make some drawings on the plate. Serve the pears with the wine and grapes and present in a decorative way.

1/4 l SanLucar orange juice
Rind of one SanLucar lemon
150 gr sugar
1 cinammon stick
2 cloves
100 gr SanLucar grapes
2 SanLucar pears
1 table spoon of starch
4 table spoons of apricot jam
