Mango, banana and pepper pan



Preparation:

Cut the garlic and ginger very finely. Cut the fruit and vegetable into cubes. Heat the SanLucar olive oil and add the garlic and ginger. Fry briefly. Add the pepper, mango and tomato and sauté briefly. Add the beef stock and banana.

Season with salt, pepper, mint and, possibly, with some lemon juice. Leave it boiling for some minutes, stiring, until the banana starts dissolving (it thickens the sauce). As garnish you can serve rice.

Ingredients (for 2 people):

1 tsp Sanlucar oil
1 garlic clove
1 small piece of ginger
1 red SanLucar pepper
1 SanLucar tomato
1 SanLucar mango
1 banana
1/4 l beef stock
1 pinch of salt and pepper
1 or 2 fresh mint leaves
1 squeeze of lemon juice
