Summer salad »SanLucar« by Rolf Straubinger

Do you like that something special just like star cook Rolf Straubinger? Then this recipe is just right for you! Rolf Straubinger combines deliciously summery sweet fruits with intensely aromatic vegetables, rounding this off with a fruity-spicy dressing and out comes a salad with the whole taste variety of the summer! Simply delicious!



For 4 people as a starter

  • 4 SanLucar Nectarines (cut into wedges)
  • 2 SanLucar Peaches (sliced)
  • 2 SanLucar Lettuce Hearts (washed)
  • 16 SanLucar Cherry Tomatoes (halved)
  • 1 SanLucar Avocado (cut into bars)
  • ½ SanLucar Salad Cucumber (cut into long strips with a potato peeler)
  • 1 SanLucar Red Pointed Pepper (peeled and cut into strips)
  • 1 SanLucar Yellow Pointed Paprika (peeled and cut into strips)
  • 200g Mozzarella Topware
  • 40g Black Olive Oil


  • 50g peach juice
  • 20g honey
  • 40g white chardonnay vinegar
  • Splash of chilli oil
  • Sea-salt
  • 50g yogurt

Mix all ingredients into a homogeneous dressing.

Black olive oil

  • Dry 500g black olives without pits in the Excalibur food dehydrator completely (about 24h to raisin size)
  • 150ml olive oil

Mix the dried olives with the olive oil in the blender for a very long time.

Oil should be completely black.


Marinate the washed and chopped ingredients of the summer salad with the dressing.

Break the mozzarella into small pieces, season with pepper and sea salt and serve together. Bon Appetit!
