Berry Dream

Our berries taste like happiness. Because for us, each variety must have its own natural full aroma, while being intensely sunny-sweet fresh and juicy. That’s why we only grow them where the berries really feel their best. And we have master growers nurture them who wholeheartedly care for their fruits. Berries always taste best when they’re very fresh and they keep only a few hours at room temperature. In the fridge – well covered – they’ll keep for a few days. And remember, only wash them shortly before you eat them!

Dessert for 4
100 ml egg whites
100 g sugar
500 g fresh strawberries
250 g fresh raspberries
250 g fresh blueberries
3 sheets of brik dough
100 ml cream
Grated zest of lime
20 ml yuzu juice
Mint

Meringue
Whisk 80 ml egg white with sugar, spread flat on a baking tray and bake at 100° C for approx. 20 minutes.
Then cut out circularly.

Strawberry stock
Mix 200 g strawberries with some sugar, mint and yuzu juice. Add the grated zest of lime
and chill.

Brik Dough
Brush the brik dough with egg white and bake in the oven at 180° C for about 10 minutes.

Strawberry Espuma
Mix 100 g strawberries and combine with the cream. Then pour into an espuma bottle (2 cream capsules). Layer the remaining berries with the meringue and brik dough chips to form a tower. Inject the strawberry espuma in between the layers for stability. Pour strawberry sauce around the tower.
