Authentic spanish tortilla with potatoes

Have you been in this situation? Except for a few eggs, onions and potatoes, your food cabinets are totally empty, but you still want to save a trip to next supermarket? No problem! For a delicious Spanish tortilla, you won’t need much more. And when the meal is ready, you’ll see that you can conjure up a really fine dish with even a few ingredients. So: get out your cutting board and put on you cooking apron – here’s the recipe:

 

Ingredients for 4 servings:

  • 1 kg of potatoes
  • 300g onions
  • 8 eggs
  • 500 mlOlive Oil
  • Salt

Preparation:

  1. Peel the onions and finely chop them. Wash the potatoes, peel. Cut in 1 cm thick cubes and sprinkle salt over them.
  2. Heat the olive oil in the pan. Add the potato cubes so that the potatoes are just covered with oil and allow to cook over medium heat for 12-15 minutes. In a second pan, fry the onions for 10-15 minutes in olive oil until they are glazed and golden brown.
  3. Place the eggs in a bowl, beat well with an egg whisk and salt a little. Lift the potatoes with a sieve from the olive oil and put into the bowl with the onions with the egg mass. Leave for 3-5 minutes. If you have some in your fridge: add some finely sliced Serrano ham to the mass.
  4. Heat to high heat approx. 2-3 tablespoons of olive oil. Then place the tortilla mass in the pan and fry for 2 minutes. But caution: do not let the eggs coagulate! When the mass slowly browns, place a plate on the tortilla and turn the pan over. Then allow the tortilla to slide back into the pan and fry from the other side for another minute. The tortilla should be liquid inside.

Bread and salad go superbly with this.
