Stuffed summer tomatoes

Do you have any special dishes you like to eat in summer? Because they’re nice and easy and you don’t demand that you spend many hours in the kitchen? That’s how we feel about ours Stuffed Summer Tomatoes. Especially when we have a lot of work to be done in the garden and we’re just too lazy to embark upon a giant cooking venture, this is our absolute favourite. Because even though their preparation is quick and easy, they’re nevertheless super delicious and will put smiles are people’s faces. To ensure that after your work in the garden you can really put your legs up, we’ve jotted down the recipe for you. And here it is –  Bon Appetit!

Ingredients:

  • 4 SanLucar Tomatoes
  • 50g semi-mature Gouda
  • 2 hard boiled eggs
  • 4 tsp low-fat mayonnaise
  • Salt & pepper
  • 1 tsp. vinegar
  • 1 sprig of SanLucar Parsley

Preparation:

Cut off the top of the tomatoes and place the lid aside. Hollow out the tomatoes and turn them upside down to drain. Cut the flesh into small pieces. Dice the cheese and eggs. Mix this all with mayonnaise and season with salt, pepper and vinegar. Mix in finely chopped parsley. Fill the tomatoes, put the lid back on and serve.
