A classic, just different: Tomato risotto

Do you also have certain standard dishes that you cook over and over? But at some point, you’ve eaten them so often that you can’t bear to look at them anymore. It’s so easy to spice up old classics! This was our case with risotto. Until we realized: It doesn’t take much to make a very different, delicious dish. Just some love and our delicious Gourmet Tomatoes. The result is a heavenly tomato risotto! Be sure to try it! We’ll reveal to you how it’s done:


  • 250 g of Gourmet Tomatoes
  • 5 teaspoons of Picual Olive Oil
  • 2 shallots
  • 2 cloves of garlic
  • 400 g of risotto rice
  • ¾ litre vegetable broth
  • ¼ litre of white wine
  • • 20 g of butter
  • • 50 g of Parmesan
  • Salt & pepper



Lightly sauté a shallot with chopped garlic in SanLucar olive oil. Add the risotto rice.

Braise and add white wine. Add the broth gradually and stir continuously. Finally, stir in the butter and Parmesan. Skin the tomato, cut into cubes and sauté in a little butter with a shallot and chopped garlic. Place risotto on the plate and garnish with shallot and garlic tomato mass. Bon Appetit!
