Autumnal: Spicy apple & Leeks vegetables

The days are getting shorter, the weather forecasts are looking bleaker. Now your soul needs food that makes it happy. And if it can be cooked quickly: fantastic! That is why I have a really kids-friendly recipe that combines hearty and sour notes and provides you with a proper vitamin kick: spicy apple leeks vegetable. Ideal as a light lunch or dinner and doesn’t take more than 15-20 minutes in preparation. »Bon appetit« is all I can say!

Ingredients:

  • 1 tart-crunchy SanLucar Apple (varieties: Braeburn, Jonagold, Topaz, Granny Smith)
  • 400 g of leeks
  • 2 tbsp butter
  • 100 ml apple juice
  • 2 tbsp crème fraîche
  • Salt, pepper
  • 1 pinch of sweet paprika powder
  • ½ EL marjoram
  • 2 tablespoons chopped hazelnuts

Preparation:

Cut the leeks into rings and the apple in slices. Fry the apple slices on both sides with a tablespoon of butter. Remove from the pan and fry the leeks with a tablespoon of butter. Drain with the apple juice and simmer for 10 – 12 minutes. Season with salt, pepper and paprika. Add apples and crème fraîche, heat briefly and serve with hazelnuts. Bon appetit!
